Not in this meal! Tonight I made veggie burgers. I divided the batch up into three zippie bags. One was used for dinner tonight (3 burgers), one went into the fridge, the other into the freezer so I can fall back on it if I find I don't have a plan for one night.
Today I signed up for a Work Force Development orientation. It's a program provided by our County. I'm also scheduled for my orientation for the NY State Department of Labor (required for my UI benefits). I've spent the past week assembling a spreadsheet of companies to send resumes to. I spoke with a former colleague who is in the field to line him up as a reference and to get feedback on what type of money I should request in his sector of the business. I also sent my resume to my realtor and she passed it on to all the appraisers she knows for feedback -- we have a breakfast date set up for the week after next. My LinkedIn profile is up and I've got my resume on Monster. Today I responded to two job postings. I've also spent some time addressing envelopes for companies and towns I want to send my resume to and will be printing cover letters and mailing them out next week. I still have a bunch of cover letters to compose.
As far as how successful I am going to be, I have no clue. With all of the budget issues going on in Washington, I also have no clue as to how long I will be eligible for the various UI benefits. For that reason, I'm trying to get some momentum going. My weekly payments amount to about half of my former take-home, but I still believe we'll do just fine. However, I will need to have something when that stops.
My goal over the next few months is to get our food and other spending down another couple of hundred dollars per month. I am ambivalent about the summer -- camp is paid off so we want to get the most out of it, but that means spending more on gas and other related things. My plan is to be as clever as possible in other areas of our life to offset that. Not sure what is in store, but I'm working on it!
Mmm, I love veggie burgers! One of my favorite ways to prepare it is to do a black bean veggie burger topped with red onion and fresh avocado.

Stephanie, great minds think alike? These had both black beans and avocado in them --OK I didn't top with avocado, but inside should count!

ReplyDeleteDarlin', there really isn't a recipe -- I use what I have in the fridge! In this case, I had an avocado and some steamed broccoli. I made up some red and black beans and mushed it all together with an egg, some bread crumbs and a five grain breakfast cereal (that was already cooked). I put in some chili powder and a bit of shredded cheddar cheese. I also had a little bit of fried tofu from another meal so I crumbled that in. I dusted the burgers with corn meal and baked them on parchment until they were sorta firm, then I sauteed them to crispy on the stove with a mixture of canola and EVOO. I find my veggie burgers don't stick to the pan as much if I coat with corn meal and pre-bake them first on parchment.
